Ingredients

  • 4 slices Whole30-compliant ham
  • 4 pieces large eggs
  • 2 tablespoons ghee or clarified butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon chopped fresh chives

Directions

Step 1

Heat a large non-stick skillet over medium heat and add 1 tablespoon of ghee or clarified butter.

Step 2

Once the butter is melted and hot, add the ham slices to the skillet. Cook the ham for about 2-3 minutes on each side, until it is nicely browned and heated through. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of ghee or clarified butter, allowing it to melt.

Step 4

Crack the eggs into the skillet, trying to keep them separated. Reduce the heat to medium-low and season with salt and black pepper.

Step 5

Cook the eggs until the whites are set but the yolks are still runny, about 3-4 minutes. If desired, cover the skillet with a lid to help the tops of the eggs cook more evenly.
