Ingredients

  • 500 grams fresh cod fillets
  • 1 large egg
  • 60 grams almond flour
  • 30 grams fresh parsley, finely chopped
  • 1 stalk green onion, finely chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 for serving lemon wedges

Directions

Step 1

Begin by poaching the cod fillets in a pot of simmering water for about 5 minutes or until fully cooked and flaky. Drain well and allow to cool slightly.

In a large mixing bowl, flake the cooled cod fillets with a fork into small pieces.

Step 3

Add the egg, almond flour, chopped fresh parsley, green onion, lemon zest, garlic powder, sea salt, and black pepper to the bowl with the flaked fish. Mix until all ingredients are well combined.
