  • 1 medium, diced red bell pepper
  • 1 cup, trimmed and halved green beans
  • 6 cups vegetable broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bay leaf
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon, chopped fresh thyme
  • 1 tablespoon fresh lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion becomes translucent.

Stir in the sliced carrots and celery. Cook for about 5 minutes, stirring occasionally.
