  • 1 medium green bell pepper, diced
  • 2 medium carrot, diced
  • 4 cloves garlic cloves, minced
  • 1 pound ground beef
  • 28 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 whole bay leaf
  • 0.25 cup fresh cilantro, chopped for garnish (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the diced onion, and sauté for about 3-4 minutes until translucent.

Add the diced red and green bell peppers and diced carrots to the pot, and cook for another 5 minutes until the vegetables start to soften.

Stir in the minced garlic and cook for another 1 minute until fragrant.

Add the ground beef to the pot, breaking it up with a spoon. Cook until browned and no pink remains, about 6-7 minutes.

Stir in the canned diced tomatoes, tomato paste, and beef broth, ensuring everything is well combined.

Add the chili powder, ground cumin, smoked paprika, cayenne pepper, salt, black pepper, and the bay leaf. Stir well to incorporate all the spices.
