Ingredients

  • 1 large green cabbage
  • 1 pound ground beef
  • 2 cups cauliflower rice
  • 1 medium onion
  • 3 garlic cloves
  • 2 cups tomato sauce
  • 1 14-ounce can diced tomatoes
  • 1 egg
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

In a large pot, bring water to a boil. Gently remove the core from the cabbage and place the whole cabbage in the boiling water. Cook until leaves are pliable, about 5 minutes. Remove from water and carefully peel off 12 large leaves. Set aside.

Step 3

In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the onion, finely chopped, and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

Step 4

In a large mixing bowl, combine ground beef, cauliflower rice, sautéed onion and garlic, egg, salt, pepper, paprika, and oregano. Mix until well combined.

Step 5

Lay a cabbage leaf flat on a cutting board, with the thicker stem side facing you. Place about 1/4 cup of the beef mixture in the center of the leaf. Fold the sides over the filling and roll it up from the stem end, like a burrito. Repeat with remaining leaves and filling.

Step 6

In a large baking dish, pour 1 cup of the tomato sauce across the bottom. Arrange the cabbage rolls, seam side down, in the baking dish.

Step 7

Mix the remaining tomato sauce with the can of diced tomatoes and pour over the cabbage rolls.

Step 8

Cover the baking dish with foil and bake in the preheated oven for 75-90 minutes, or until the rolls are cooked through and tender.
