  • 3 large celery stalks

  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 5 sprigs fresh thyme
  • 2 bay leaves
  • 8 ounces mushrooms
  • 0.25 cup fresh parsley

Directions

Step 1

Preheat your oven to 325°F (165°C).

Season the beef chuck roast generously with salt and black pepper on all sides.

Heat olive oil in a large Dutch oven over medium-high heat. Once hot, add the beef and sear all sides until browned, about 5-7 minutes per side. Remove the beef and set aside.
