  • 3 pounds beef brisket
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 3 cloves garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons tomato paste
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 8 leaves collard green leaves
  • 1 cup pickles (Whole30 compliant), sliced

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a large Dutch oven or oven-safe pot over medium-high heat, heat the olive oil.

Add the beef brisket and brown on all sides, about 4 minutes per side. Remove and set aside.

In the same pot, add the sliced onion and sauté for 5 minutes until softened. Add the minced garlic and sauté for 1 more minute.
