Preheat the oven to 300°F (150°C).
Trim any excess fat from the beef chuck roast.
Season the roast with salt and black pepper, ensuring each side is covered.
Heat coconut oil in a large Dutch oven over medium-high heat.
Sear the beef roast in the Dutch oven for 4-5 minutes on each side to brown. Remove the beef and set aside.
Peel and finely dice the large onion.
Mince the large garlic cloves.
In the same Dutch oven, reduce heat to medium, and add the diced onion. Sauté for about 5 minutes until translucent.
Add minced garlic and sauté for another minute until fragrant.
