Ingredients

  • 3 pounds Beef chuck roast
  • 1 large Onion
  • 4 large Garlic cloves
  • 14 ounces Canned crushed tomatoes
  • 0.25 cup Balsamic vinegar
  • 0.25 cup Date syrup
  • 2 teaspoons Smoked paprika
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Coconut aminos
  • 2 tablespoons Coconut oil

Directions

Step 1

Preheat the oven to 300°F (150°C).

Step 2

Trim any excess fat from the beef chuck roast.

Step 3

Season the roast with salt and black pepper, ensuring each side is covered.

Step 4

Heat coconut oil in a large Dutch oven over medium-high heat.

Step 5

Sear the beef roast in the Dutch oven for 4-5 minutes on each side to brown. Remove the beef and set aside.

Peel and finely dice the large onion.
