Ingredients

  • 2 tablespoons Coconut oil
  • 1 pound Ground beef
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 2 whole Ripe avocados
  • 1 whole Lime
  • 2 tablespoons Fresh cilantro
  • 1 cup Cherry tomatoes
  • 0.5 whole Red onion
  • 1 cup Kale
  • 0.5 cup Black olives
  • 1 whole Jalapeño
  • 1 cup Whole30 compliant salsa

Directions

Step 1

Heat coconut oil in a skillet over medium heat. Add ground beef and cook until browned, about 6-8 minutes. Drain any excess fat.

Step 2

Stir in chili powder, ground cumin, garlic powder, onion powder, and salt. Mix well to fully coat the beef with seasonings. Set aside to cool.

Step 3

In a medium bowl, mash the avocados. Squeeze the juice of one lime over the avocados and combine with chopped fresh cilantro. Set aside.

Step 4

Dice cherry tomatoes and finely chop red onion. Mix together in a small bowl and set aside.

Step 5

In a 9-inch serving dish, layer the seasoned beef evenly at the bottom.

Spread the mashed avocado mixture over the beef layer.

Next, add a layer of the mixed cherry tomatoes and red onions.

Finely chop the kale and evenly spread it over the tomato layer.

Slice the black olives and jalapeño, and layer them on top of the kale.

Finally, top the dip with Whole30 compliant salsa.
