Ingredients

  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 cups Cauliflower rice
  • 2 tablespoons Lime juice
  • 0.5 cup Fresh cilantro
  • 1 Red bell pepper, diced
  • 0.5 Red onion, diced
  • 1 Avocado, sliced
  • 1 cup Cherry tomatoes, halved
  • 2 cups Romaine lettuce, shredded

Directions

Step 1

In a small bowl, mix together chipotle chili powder, cumin, garlic powder, onion powder, salt, and black pepper.

Step 2

Rub the spice mixture evenly over the chicken breasts and let them sit while you prepare the other ingredients.
