Ingredients

  • 1 cup Light olive oil
  • 2 tablespoons Lemon juice, freshly squeezed

  • 1 teaspoon Chipotle powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika

Directions

Step 1

In a tall, narrow jar or container that fits the head of an immersion blender, crack the egg and add it in whole, ensuring the yolk remains intact.

Step 2

Add the lemon juice and allow the egg to settle at the bottom of the container.

Step 3

Drizzle the light olive oil over the egg and lemon juice. The oil should form a layer above the other ingredients.

Step 4

Place the immersion blender at the bottom of the jar, over the egg yolk. Turn it on and hold it at the bottom for about 10 seconds. You should see the mayonnaise begin to emulsify and thicken at the bottom of the container.

Step 5

Slowly, start to tilt the immersion blender up and down to incorporate the rest of the oil, continuing until the entire mixture thickens to a creamy consistency.

Step 6

Once thickened, add the minced garlic, chipotle powder, salt, pepper, and smoked paprika. Blend again briefly to combine all flavors.

Step 7

Taste and adjust seasoning if necessary. Add more chipotle powder for extra spice or more lemon juice for tang, if desired.
