Ingredients

  • 4 large red bell peppers
  • 6 medium red chillies
  • 0.75 cup apple cider vinegar
  • 1 cup medjool dates
  • 1 inch piece fresh ginger
  • 4 cloves garlic
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 0.5 cup water

Directions

Step 1

Start by washing the red bell peppers and red chillies. Remove the seeds and core from the bell peppers and roughly chop them. For the chillies, remove seeds if you prefer a milder jam.

Step 2

Pit the medjool dates and roughly chop them. Peel the ginger and slice it thinly. Peel the garlic cloves.

Step 3

In a food processor, add the chopped bell peppers, chillies, dates, ginger, and garlic. Pulse until finely chopped and well mixed.

Transfer the mixture to a large saucepan and add the apple cider vinegar, water, salt, and lime juice.

Bring the mixture to a boil over medium-high heat, then reduce the heat to a simmer.
