  • 2 pounds boneless beef chuck roast
  • 3 units dried ancho chiles
  • 3 units dried guajillo chiles
  • 2 units dried arbol chiles
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 4 units garlic cloves
  • 14 ounces canned crushed tomatoes
  • 2 cups beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 tablespoon cider vinegar
  • 0.25 cup fresh cilantro

Directions

Step 1

Prepare the chiles by removing the stems and seeds. Rinse and soak the ancho, guajillo, and arbol chiles in a bowl of hot water for 20 minutes until softened.

Step 2

Drain the chiles and transfer them to a blender or food processor. Add the canned crushed tomatoes and purée until smooth. Set aside.

Cut the beef chuck roast into 1-inch cubes. Season with salt and pepper.
