Ingredients

  • 15 ounces canned chickpeas
  • 0.5 medium red onion
  • 0.25 cup fresh parsley
  • 2 pieces garlic cloves
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon black pepper
  • 0.25 cup coconut flour
  • 2 tablespoons extra virgin olive oil

Directions

Step 1

Drain and rinse the canned chickpeas and place them in a large mixing bowl.

Step 2

Finely chop the red onion and parsley. Mince the garlic cloves. Add these to the bowl with the chickpeas.

Step 3

Add ground cumin, smoked paprika, and black pepper to the bowl.

Step 4

Using a potato masher or fork, mash the chickpeas with the other ingredients until the mixture sticks together but still has some texture.

Step 5

Add the coconut flour to the mixture and stir until everything is well combined, allowing the flour to absorb some moisture.

Step 6

Form the mixture into 8 equal-sized patties.

Step 7

Heat the olive oil in a large skillet over medium heat.

Step 8

Once the oil is hot, add the patties to the skillet, in batches if necessary, and cook for about 5 minutes on each side or until they are golden brown and heated through.

Step 9

Remove the patties from the skillet and allow them to cool for a few minutes before serving.
