Ingredients

  • 1 pound Boneless, skinless chicken breast
  • 3 tablespoons Coconut aminos
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 teaspoon Arrowroot powder
  • 1 teaspoon Ginger, freshly grated
  • 3 cloves Garlic, minced
  • 2 medium Sweet potatoes, spiralized
  • 2 cups Green cabbage, thinly sliced
  • 1 cup Carrots, julienned
  • 1 medium Red bell pepper, thinly sliced
  • 3 Green onions, sliced
  • 1 tablespoon Sesame seeds
  • 2 tablespoons Avocado oil
  • 2 tablespoons Water

Directions

Step 1

In a small bowl, combine coconut aminos, rice vinegar, sesame oil, and arrowroot powder. Stir until the arrowroot is completely dissolved. Set aside.

Step 2

Slice the chicken breast into thin strips. Set aside.

Step 3

Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat.

Step 4

Add the chicken slices to the skillet and cook until fully cooked and lightly browned, about 5-6 minutes. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, add the remaining 1 tablespoon of avocado oil. Add garlic and ginger, and sauté for about 30 seconds until fragrant.

Add the spiralized sweet potatoes to the skillet and cook for about 3-4 minutes, stirring occasionally, until they start to soften.

Add the sliced cabbage, julienned carrots, and red bell pepper to the skillet. Sauté for an additional 4-5 minutes until the vegetables are tender-crisp.

Step 8

Return the cooked chicken to the skillet. Stir in the sauce and water. Toss everything until well combined and the sauce has thickened slightly, about 2-3 minutes.

Step 9

Garnish with sliced green onions and sesame seeds before serving.
