  • 1.5 pounds Chicken thighs, boneless and skinless
  • 2 tablespoons Coconut oil
  • 1 large Onion, thinly sliced
  • 4 pieces Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 medium Tomato, chopped
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 1 tablespoon Lemon juice
  • 0.25 cup Fresh cilantro, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Water

Directions

Step 1

Cut the chicken thighs into small bite-sized pieces and set aside.

Step 2

Heat the coconut oil in a large skillet over medium heat.

Step 3

Add the sliced onions and sauté until golden brown, about 5-7 minutes.

Add the minced garlic and grated ginger to the skillet, and stir for another minute until fragrant.
