Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 8 ounces button mushrooms, sliced
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 tablespoons coconut aminos
  • 2 tablespoons arrowroot powder
  • 2 tablespoons water
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and season with salt and pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and sear until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the chopped onion and cook for 3-4 minutes until soft and translucent. Stir in the minced garlic and cook for an additional 1 minute.
