Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 pieces Coconut wraps or other grain-free wraps
  • 1 large Bell pepper, sliced
  • 1 medium Red onion, sliced
  • 1 large Avocado, sliced
  • 2 tablespoons Fresh cilantro, chopped
  • 1 Lime, cut into wedges

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a small bowl, mix together the chili powder, garlic powder, onion powder, cumin, salt, and black pepper.

Step 3

Rub the chicken breasts with half of the olive oil and season evenly with the spice mixture.

Step 4

In a large skillet, heat the remaining olive oil over medium heat. Add the chicken and cook for 5-7 minutes on each side or until fully cooked and no longer pink in the middle.

Remove the chicken from the skillet and let it rest for a few minutes before slicing it thinly.

Step 6

In the same skillet, add the bell pepper and red onion. Sauté for 5 minutes or until they're softened and slightly charred.
