  • 1 pound chicken breast
  • 4 cups cauliflower rice
  • 4 cups chicken stock
  • 2 inches piece, sliced ginger
  • 3 garlic cloves
  • 1 bay leaf
  • 3 chopped green onions
  • 2 tablespoons coconut aminos
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 0.5 cup chopped fresh cilantro
  • 2 sliced for serving (optional) boiled eggs

Directions

Step 1

In a large pot, add the chicken breasts and cover them with the chicken stock.

Add the sliced ginger, whole garlic cloves, and bay leaf to the pot.
