Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 large poblano peppers, diced
  • 3 large garlic cloves, minced
  • 1.5 pounds boneless, skinless chicken breasts, cubed
  • 4 cups chicken broth (compliant with Whole30)
  • 1 cup coconut milk, canned
  • 2 medium sweet potatoes, peeled and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 1 lime lime wedges (for serving)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the diced onion and poblano peppers to the pot. Cook, stirring occasionally, until the onion is translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the cubed chicken breasts to the pot. Cook until white and no longer pink on the outside, about 5-7 minutes.

Step 5

Pour in the chicken broth and coconut milk. Stir to combine.

Step 6

Add the diced sweet potatoes, ground cumin, dried oregano, salt, and pepper. Stir well.

Step 7

Bring the mixture to a simmer. Reduce heat to low, cover the pot, and let it cook for about 25-30 minutes or until the sweet potatoes are tender.

Step 8

Use a fork to lightly smash some of the sweet potatoes against the sides of the pot to thicken the chowder.

Step 9

Taste and adjust seasonings if necessary.

Step 10

Serve the chowder hot, garnished with chopped fresh cilantro and lime wedges on the side for squeezing. Enjoy!
