  • 4 cups Cauliflower rice
  • 1 pound Chicken breast
  • 3 tablespoons Coconut aminos
  • 2 tablespoons Coconut oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 medium Green bell pepper
  • 1 medium Carrot
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 large Banana leaves

Directions

Step 1

First, prepare the ingredients: Finely chop the onion and garlic. Dice the green bell pepper and carrot. Cut the chicken breast into small, bite-sized pieces.

Step 2

Heat 1 tablespoon of coconut oil in a large skillet over medium heat. Add the chicken pieces and cook until they are no longer pink, about 5-7 minutes.

Once the chicken is cooked, remove it from the skillet and set it aside.

Using the same skillet, add the remaining tablespoon of coconut oil. Sauté the onion and garlic until fragrant and the onion is translucent, about 3 minutes.
