  • 8 pieces romaine lettuce leaves
  • 1 unit English cucumber, thinly sliced
  • 0.5 unit red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh dill, chopped
  • 0.5 cup Whole30 compliant mayonnaise
  • 2 tablespoons coconut milk
  • 1 clove fresh garlic, minced
  • 1 tablespoon fresh lemon juice

Directions

Step 1

In a bowl, combine olive oil, lemon juice, red wine vinegar, minced garlic, oregano, thyme, salt, and pepper. Mix well.

Place chicken breasts in a large resealable plastic bag, pour the marinade over the chicken, seal the bag, and ensure the chicken is well coated. Refrigerate for at least 30 minutes or up to 4 hours for best results.
