Ingredients

  • 2 cups Cooked chicken breast
  • 3 tablespoons Coconut oil
  • 1 medium Yellow onion, chopped
  • 3 Garlic cloves, minced
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lime juice
  • 0.25 cup Cilantro, chopped
  • 8 Grain-free tortillas

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large skillet, heat 1 tablespoon of coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Add the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for another minute to toast the spices.

Step 5

Add the cooked chicken breast to the pan, and mix well with the onion, garlic, and spices until well combined.

Remove from heat and stir in the lime juice and chopped cilantro.
