Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 4 minced Garlic cloves
  • 1 cup Cashews
  • 3 tablespoons Nutritional yeast
  • 2 tablespoons Lemon juice
  • 1.5 cups Water
  • 2 tablespoons Fresh parsley

Directions

Step 1

Place cashews in a bowl and cover with hot water. Let them soak for at least 15 minutes while you prepare the other ingredients.

Step 2

Using a spiralizer, turn the zucchinis into zoodles (zucchini noodles) and set aside.

Step 3

Season the chicken breasts with 0.5 teaspoon of salt and the black pepper.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked through and the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and let it rest.
