  • 1 pound chicken breast
  • 4 large zucchini
  • 0.25 cup coconut aminos
  • 2 tablespoons arrowroot powder
  • 3 cloves garlic
  • 1 inch piece ginger
  • 4 stalks scallions
  • 1 medium red bell pepper
  • 2 large carrots
  • 2 tablespoons sesame oil
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper

Directions

Step 1

Place the chicken breast in the freezer for 10 minutes to make slicing easier.

Step 2

Spiralize the zucchini into noodles and set aside.

Step 3

Remove the chicken from the freezer and thinly slice it against the grain.

Step 4

In a mixing bowl, combine the chicken slices with arrowroot powder, 1 tablespoon of coconut aminos, salt, and pepper. Mix well to coat.

Mince the garlic and finely chop the ginger.
