Ingredients

  • 4 pieces Zucchini (medium-sized)
  • 1 pound Ground beef
  • 2 tablespoons Olive oil
  • 1 piece Onion (small, finely chopped)
  • 3 cloves Garlic cloves (minced)
  • 14.5 ounce can Canned diced tomatoes (no added sugar)
  • 1 batch Cashew cheese sauce
  • 0.25 cup Chopped fresh basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Start by making the zoodles. Use a spiralizer to spiralize the zucchini into noodles and set aside on a paper towel to absorb excess moisture.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

Step 3

Add the ground beef to the skillet and cook, stirring frequently, until browned and cooked through, about 6-8 minutes. Drain any excess fat, if necessary.

Step 4

Stir in the canned diced tomatoes and simmer for about 10 minutes to allow the flavors to meld. Season with salt and black pepper.

Step 5

While the meat sauce simmers, prepare the cashew cheese sauce according to the recipe instructions.

Step 6

In another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the zoodles and sauté them lightly for 2-3 minutes until just tender, but not mushy.

Step 7

Once the meat sauce is ready, gently fold in the cashew cheese sauce until well combined.

Step 8

Serve the cheesy meat sauce over a bed of zoodles, garnished with chopped fresh basil leaves.
