Ingredients

  • 1 pound ground beef
  • 1 large egg
  • 0.25 cup almond flour
  • 1 tablespoon nutritional yeast
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 15 pieces nutritional yeast 'cheese' cubes
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly oil it.

Step 2

In a large mixing bowl, combine the ground beef, egg, almond flour, nutritional yeast, onion powder, garlic powder, dried oregano, dried basil, salt, and black pepper. Mix thoroughly with your hands or a spatula until all ingredients are well combined.

Step 3

Scoop out about 1 1/2 tablespoons of the meat mixture and flatten it in your hand.

Step 4

Place one nutritional yeast 'cheese' cube in the center of the flattened meat, then fold the meat around it, rolling it gently between your hands to form a sealed meatball.

Step 5

Repeat the process until all the meat mixture is used. You should have around 15 to 16 meatballs.

Step 6

Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot but not smoking, add the meatballs in batches without overcrowding the skillet.

Step 7

Sear the meatballs for 2-3 minutes until nicely browned on all sides. Transfer them to the prepared baking sheet.

Step 8

Bake the seared meatballs in the preheated oven for 10-12 minutes, or until cooked through.

Step 9

Remove the meatballs from the oven and let them rest for a few minutes. Sprinkle with fresh parsley before serving.

Step 10

Serve warm as a delicious appetizer or with a side salad for a complete meal.
