Begin by cleaning the cauliflower. Remove the leaves and stem, and cut the cauliflower into florets.
In a large pot, add the cauliflower florets and enough water to cover them. Bring to a boil over high heat.
Once boiling, reduce the heat to medium, cover, and allow the cauliflower to cook for about 10 minutes or until it's very tender.
While the cauliflower is cooking, peel and mince the garlic cloves.
In a small saucepan, melt the ghee over medium-low heat. Add the minced garlic and saute for 1-2 minutes until fragrant. Remove from heat.
Drain the cauliflower thoroughly and place it in a food processor or blender.
Add the melted ghee with garlic, almond milk, salt, and pepper to the cauliflower in the processor.
Blend the ingredients on high until the cauliflower puree is very smooth and creamy. You may need to stop and scrape down the sides of the bowl a few times.
