Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Coconut oil
  • 1 medium, finely chopped Onion
  • 1 large, chopped Tomato
  • 1 inch piece, grated Ginger
  • 3 finely chopped Garlic cloves
  • 1 finely chopped Green chili
  • 1 teaspoon Coriander powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Salt
  • 2 tablespoons, chopped Fresh cilantro
  • 1 tablespoon Lemon juice

Directions

Step 1

Prepare the cauliflower by removing the leaves and cutting it into small florets. Wash and drain well.

Step 2

Heat the coconut oil in a large pan over medium heat. Once hot, add the cumin and mustard seeds, allowing them to splutter for about 30 seconds.

Step 3

Add the chopped onions to the pan and sauté until translucent, about 3-4 minutes.

Step 4

Stir in the grated ginger, chopped garlic, and green chili. Sauté for another 2 minutes until fragrant.

Step 5

Add the chopped tomatoes, coriander powder, and turmeric powder. Cook for 3-4 minutes until the tomatoes soften and the spices are well blended.

Add the cauliflower florets to the pan. Stir well to coat the florets with the spice mixture.

Season with salt and mix thoroughly. Cover the pan and cook on medium-low heat for 10-15 minutes, stirring occasionally, until the cauliflower is tender yet retains a slight crunch.
