  • 1.5 cups pitted Medjool dates
  • 0.5 cup unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt

Directions

Step 1

Line an 8x8 inch baking dish with parchment paper, ensuring extra paper hangs over the edges for easy removal.

Step 2

In a food processor, add the raw cashews and pulse a few times until chopped into small pieces, but not fully ground.

Step 3

Add the pitted Medjool dates, unsweetened shredded coconut, vanilla extract, and sea salt to the food processor.

Pulse the mixture until it begins to clump together. It should be sticky enough to hold together when pressed between your fingers.
