Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 600 grams carrots, peeled and sliced
  • 1 teaspoon ground coriander
  • 4 cups vegetable broth (Whole30-compliant)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for about 5 minutes, until translucent.

Step 3

Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.

Step 4

Add the sliced carrots and ground coriander to the pot, stirring well to coat the carrots with the spices.

Step 5

Pour in the vegetable broth and bring the mixture to a boil.

Step 6

Reduce the heat to a simmer, cover the pot, and cook for 25 minutes, or until the carrots are tender.

Step 7
