  • 1 cup Water
  • 0.5 cup Extra virgin olive oil

  • 1 tsp Anchovy paste
  • 1 tsp Sea salt
  • 0.5 tsp Freshly ground black pepper

Directions

Step 1

Place the raw cashews in a bowl and cover them with water. Allow them to soak for at least 4 hours or overnight. This will soften the cashews, making them easier to blend and achieving a smoother dressing.

Step 2

Drain and rinse the soaked cashews thoroughly with fresh water until the water runs clear.

Step 3

In a high-speed blender, combine the drained cashews and 1 cup of fresh water. Blend on high until smooth and creamy, scraping down the sides as necessary.
