  • 2 cans (13.5 oz each) full-fat coconut milk
  • 1 cup medjool dates, pitted
  • 2 tablespoons almond butter
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon sea salt
  • 1 tablespoon coconut oil
  • 0.5 cup water

Directions

Step 1

Add the medjool dates and water to a small saucepan and bring to a boil over medium heat. Simmer for about 5 minutes until the dates are soft and the water is mostly absorbed, stirring occasionally.

Step 2

Transfer the softened dates and any remaining liquid to a blender. Add one can of coconut milk, almond butter, vanilla extract, and sea salt. Blend until you achieve a smooth and creamy mixture.
