Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 3 cloves garlic cloves
  • 4 cups broccoli
  • 4 cups vegetable broth
  • 1 cup raw almonds
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 3 tablespoons nutritional yeast
  • 0.25 cup fresh parsley

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Chop the yellow onion and mince the garlic cloves. Add them to the pot and sauté for about 5 minutes, until the onion is translucent.

Step 3

Wash and cut the broccoli into florets. Add the broccoli to the pot and continue to cook for another 5 minutes.

Step 4

Pour in the vegetable broth, bringing the pot to a boil. Reduce the heat and simmer for 15 minutes, until the broccoli is tender.

While the soup simmers, place raw almonds in a bowl and cover with hot water, letting them soak for 10 minutes. Drain and set aside.
