Ingredients

  • 4 pieces large eggs
  • 2 tablespoons coconut milk
  • 1 tablespoon ghee
  • 6 pieces romaine or butter lettuce leaves
  • 0.5 cup diced red bell pepper
  • 0.25 cup diced red onion
  • 1 piece avocado
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 teaspoons hot sauce (optional)

Directions

Step 1

In a medium bowl, whisk the eggs together with the coconut milk, salt, and black pepper until well combined.

Step 2

Heat a non-stick skillet over medium heat and add the ghee. Allow it to melt and coat the skillet evenly.

Step 3

Add the diced red onion and bell pepper to the skillet and sauté for about 3-4 minutes, until they start to soften.
