Ingredients

  • 2 cups Almond flour
  • 0.5 cup Flaxseed meal
  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 3 large Eggs
  • 1 cup Unsweetened applesauce
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Walnuts, chopped
  • 0.5 cup Raisins

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with a little coconut oil or line it with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, flaxseed meal, baking soda, cinnamon, nutmeg, and salt. Mix thoroughly to ensure there are no clumps.

Step 3

In a separate bowl, whisk together the eggs, unsweetened applesauce, melted coconut oil, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Make sure not to overmix to keep the cake tender.

Step 5

Gently fold in the chopped walnuts and raisins, distributing them evenly throughout the batter.

Step 6

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Step 7

Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Step 9

Once cooled, slice and serve your Whole30 Bran Cake, either on its own or with a topping of your choice, such as a dollop of unsweetened almond yogurt or fresh berries.
