Ingredients

  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 1 pound Ground beef
  • 1 medium, chopped Onion
  • 3 minced Garlic cloves
  • 2 tablespoons Tomato paste
  • 14 ounces Canned crushed tomatoes
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Cracked black pepper
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Red pepper flakes
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Start by preparing the zucchini noodles (zoodles) as a Whole30 compliant alternative to pasta. Use a spiralizer on the medium setting to make zoodles that resemble bowtie pasta. Set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook until it's no longer pink, breaking it into crumbles with a spatula, about 6-7 minutes. Remove the beef from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion for about 3 minutes until it becomes translucent. Add the minced garlic and continue to sauté for another minute until fragrant.

Step 4

Stir in the tomato paste with the onions and garlic until well combined.

Step 5

Add the canned crushed tomatoes, basil, oregano, black pepper, salt, and red pepper flakes to the skillet. Stir well and bring the sauce to a simmer.

Step 6

Once the sauce is simmering, return the cooked ground beef to the skillet. Stir to combine. Simmer for an additional 10 minutes, stirring occasionally.

Step 7

While the sauce is simmering, heat a separate large non-stick skillet over medium heat. Add the zoodles and cook them for about 3-4 minutes until they are tender but not mushy. Stir occasionally.

Step 8

To serve, divide the zoodles among serving plates. Top with a generous portion of meat sauce.

Step 9

Garnish with freshly chopped parsley and serve immediately.
