  • 1 teaspoon salt
  • 2 tablespoons white vinegar
  • 2 cloves fresh garlic, minced
  • 0.25 cup cold water

Directions

Step 1

Start by soaking the sheep casings in cold water for about 30 minutes. This will make them more pliable and easier to work with. Rinse the casings thoroughly, both inside and out, before using.

Dice the beef chuck and pork shoulder into small cubes, making them easier to grind. Keep the meat cold while working to ensure good texture.

Using a meat grinder with a coarse plate, grind the beef and pork into a large mixing bowl. Maintain a chilled environment to prevent the fat from melting.
