Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Peel and slice the eggplant into 1/2-inch thick rounds. Place them on the baking sheet, brush with 1 tablespoon of olive oil, and season lightly with salt and pepper.
Roast the eggplant slices for about 20 minutes until tender and golden brown, flipping halfway through.
Remove the eggplant from the oven and let it cool slightly. Then, chop it into small pieces.
In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
Add the chopped red onion and garlic, sauté for about 4 minutes until the onion becomes translucent.
Stir in the cumin, coriander, and smoked paprika, and cook for an additional 2 minutes until the spices are fragrant.
In a large mixing bowl, combine the roasted eggplant, sautéed onion and garlic mixture, nutritional yeast, cauliflower rice, coconut flour, egg, salt, black pepper, chopped cilantro, and lime zest.
Mix everything thoroughly until well combined.
Using your hands, form the mixture into 8 equal-sized patties and place them on a new parchment-lined baking sheet.
Place the baking sheet in the oven and bake for 15-20 minutes, flipping the patties halfway through, until they are firm and slightly golden.
Serve warm. The patties can be enjoyed on their own or with a salad or wrapped in lettuce leaves.
