Ingredients

  • 1 pound beef sirloin or tenderloin
  • 0.5 cup coconut aminos
  • 0.25 cup freshly squeezed calamansi juice (or lemon juice)
  • 4 cloves garlic
  • 2 medium red onion
  • 2 tablespoons avocado oil
  • 0.5 teaspoon ground black pepper
  • 2 stalks scallions (green onions), sliced
  • 0.5 teaspoon salt

Directions

Step 1

Slice the beef sirloin or tenderloin into 1/4-inch thick pieces, cutting against the grain to ensure tenderness.

Step 2

In a bowl, combine the coconut aminos, calamansi or lemon juice, minced garlic, and ground black pepper. Mix well to create the marinade.

Step 3

Place the beef slices into the marinade, ensuring each piece is well-coated. Allow the beef to marinate for at least 30 minutes in the refrigerator, or overnight for best results.

Step 4

While the beef is marinating, slice the red onions into rings and set aside.

Step 5

Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Once hot, add the marinated beef slices (reserving the marinade) and sear them for about 2-3 minutes on each side or until browned. Do this in batches if necessary to avoid overcrowding the pan.

Step 6

Remove the beef from the skillet and set aside.

Step 7

In the same skillet, add the remaining tablespoon of avocado oil. Add the onion rings and sauté until they are soft and slightly caramelized, about 5-7 minutes.

Step 8

Pour the reserved marinade into the skillet with the onions. Bring it to a simmer and let it cook for about 5 minutes to reduce slightly.

Step 9

Return the seared beef to the skillet. Stir to combine with the onions and sauce. Let it cook together for another 10-15 minutes, or until the beef is tender and the flavors are well incorporated.

Step 10

Season with salt to taste and garnish with sliced scallions.

Step 11

Serve hot, optionally with a side of cauliflower rice or other Whole30 compliant sides.
