  • 2 tablespoons apple cider vinegar

  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground cinnamon
  • 6 cups beef broth
  • 1 medium carrot, julienned
  • 2 medium zucchini, spiralized
  • 0.5 cup fresh cilantro, chopped
  • 4 units radishes, thinly sliced
  • 2 units lime, cut into wedges
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Start by preheating your oven to 300°F (150°C).

Step 2

Heat a large skillet over medium heat and add the olive oil. Sear the beef chuck roast on all sides until brown, about 8 minutes in total. Remove the beef and set it aside.

Soak the guajillo and ancho chilies in hot water for 15 minutes until soft. Drain and remove the stems and seeds.
