Ingredients

  • 3 pounds beef chuck roast
  • 4 pieces dried guajillo chilies
  • 2 pieces dried ancho chilies
  • 2 pieces dried pasilla chilies
  • 1 large white onion
  • 6 whole garlic cloves
  • 2 pieces bay leaves
  • 1 piece cinnamon stick
  • 1 teaspoon clove
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon black peppercorns
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons sea salt
  • 4 cups bone broth
  • 2 tablespoons olive oil
  • 0.5 cup fresh cilantro
  • 1 whole lime

Directions

Step 1

Cut the beef chuck roast into large chunks and season with sea salt.

Step 2

Toast the guajillo, ancho, and pasilla chilies in a dry skillet over medium heat until fragrant, about 2-3 minutes. Remove the stems and seeds.

Step 3

Place the toasted chilies in a bowl and cover them with boiling water. Let them soak for 15 minutes until softened.

Step 4

In a blender, combine the soaked chilies, onion, garlic, apple cider vinegar, bay leaves, cinnamon stick, clove, oregano, cumin, and black peppercorns. Blend until smooth, adding some of the soaking liquid if needed to help blend.
