  • 250 g okra (bhindi)
  • 2 tablespoons coconut oil
  • 1 cup fresh coriander leaves
  • 0.5 cup fresh mint leaves
  • 2 tablespoons lime juice
  • 2 large garlic cloves
  • 1 small green chilies
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon salt
  • 0.25 cup water

Directions

Step 1

Wash the okra thoroughly and pat dry using a clean kitchen towel. Trim the ends and cut into small pieces.

Step 2

Heat the coconut oil in a large pan over medium heat. Add the cumin seeds and allow them to sizzle for a few seconds until fragrant.

Step 3

Add the chopped okra to the pan and sauté for about 10-12 minutes, stirring occasionally, until the okra is cooked through and slightly browned.
