Ingredients

  • 4 medium Russet potatoes
  • 2 tablespoons Coconut oil
  • 1 small, finely chopped Onion
  • 3 cloves, minced Garlic
  • 1 medium, grated Carrot
  • 2 stalks, finely sliced Scallions
  • 1 large, beaten Egg
  • 2 tablespoons, chopped Fresh cilantro
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and dice the potatoes into even-sized chunks for even cooking.

Step 2

Place the potatoes in a large pot and cover them with water. Bring to a boil over medium-high heat, and cook until tender, about 15-20 minutes.

Step 3

While the potatoes are cooking, heat 1 tablespoon of coconut oil in a skillet over medium heat.

Step 4

Add the chopped onion and sauté until translucent, about 5 minutes.

Step 5

Add the minced garlic and grated carrot to the skillet and continue to cook for an additional 3-4 minutes until the carrot softens.

Step 6

Once the potatoes are tender, drain them and return them to the pot. Mash the potatoes until smooth and let them cool for a few minutes.

Step 7

In a large mixing bowl, combine the mashed potatoes, sautéed vegetables, sliced scallions, beaten egg, chopped cilantro, salt, and black pepper. Mix until all ingredients are well incorporated.

Step 8

Form the mixture into patties, using roughly 1/4 cup of the mixture for each patty.

Step 9

Heat the remaining 1 tablespoon of coconut oil in a non-stick skillet over medium heat.

Step 10

Cook the patties in batches, browning each side for about 3-4 minutes, until crispy and golden brown.

Step 11

Place cooked patties on a paper towel-lined plate to remove excess oil.

Step 12

Serve warm with your favorite Whole30-compliant sauce or a fresh salad.
