Ingredients

  • 500 grams raw beetroot
  • 3 large eggs
  • 100 grams almond flour
  • 50 grams tapioca flour
  • 3 tablespoons olive oil
  • 2 minced garlic cloves
  • 1 medium, finely chopped onion
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon baking powder (Whole30 compliant)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a square baking dish with parchment paper.

Step 2

Peel the beetroots and grate them using a box grater or food processor. Transfer the grated beetroot to a large mixing bowl.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes. Allow to cool slightly.

Step 4

In the large bowl with the grated beetroot, add the sauteed onion and garlic, almond flour, tapioca flour, beaten eggs, chopped parsley, salt, black pepper, remaining olive oil, and baking powder.
