Ingredients

  • 4 medium fresh beetroots
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups mixed greens
  • 0.5 cup feta cheese
  • 0.25 cup walnuts
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash the beetroots thoroughly and wrap each one in aluminum foil. Place the wrapped beetroots on a baking sheet.

Roast in the preheated oven for about 40 minutes or until tender when pierced with a fork.
