Ingredients

  • 2 whole medium beetroots
  • 1 teaspoon Zaatar seasoning
  • 0.5 cup raw cashews
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 whole garlic cloves
  • 2 tablespoons tahini
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 0.25 cup water

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash the beetroots thoroughly and wrap them individually in aluminum foil.

Step 3

Place the wrapped beetroots on a baking sheet and roast in the oven for about 45 minutes, or until they are fork-tender.

While the beetroots are roasting, soak the raw cashews in hot water for at least 20 minutes to soften them, then drain.

Once the beetroots are roasted, remove them from the oven and let them cool slightly. When cool enough to handle, peel off the skins.
