Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 3 medium carrots, sliced into rounds
  • 1 large sweet potato, peeled and cubed
  • 1 medium zucchini, cubed
  • 1 can (14 ounces) crushed tomatoes
  • 2 cups beef broth
  • 0.5 cup dried apricots, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 0.5 teaspoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped

Directions

Step 1

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy pot over medium-high heat.

Step 2

Add the beef cubes in batches, being careful not to overcrowd the pan. Brown the beef on all sides and transfer to a plate as each batch is completed.

Step 3

Reduce the heat to medium and add the remaining tablespoon of olive oil to the pot.

Add the onion and garlic, and sauté until the onion becomes soft and slightly translucent, about 5 minutes.

Bring the stew to a simmer, then reduce the heat to low and cover the pot.

Let it simmer gently for 1.5 to 2 hours, or until the beef is tender and the flavors are well developed. Stir occasionally to ensure it does not stick to the bottom.
