Ingredients

  • 2 pounds Beef chuck, cut into 1-inch cubes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Coconut oil
  • 1 large Yellow onion, chopped
  • 3 Garlic cloves, minced
  • 4 medium Carrots, sliced
  • 3 Celery stalks, sliced
  • 2 tablespoons Tomato paste
  • 4 cups Beef broth, Whole30 compliant
  • 2 Bay leaves
  • 1 teaspoon Thyme, dried
  • 1 cup Frozen peas
  • 0.25 cup Fresh parsley, chopped for garnish

Directions

Step 1

Season the beef cubes with salt and black pepper.

Step 2

Heat coconut oil in a large Dutch oven or soup pot over medium-high heat.

Add the beef in batches, browning each side for about 3-4 minutes. Remove from the pot and set aside.

In the same pot, add chopped onion and sauté for 4-5 minutes until translucent.
