Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 3 Garlic cloves, minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 tablespoon Fresh lime juice
  • 8 large Lettuce leaves (romaine or butterhead)
  • 1 cup Cherry tomatoes, diced
  • 0.25 cup Cilantro, chopped
  • 1 Avocado, sliced
  • 2 Green onions, chopped

Directions

Step 1

In a large skillet over medium heat, add olive oil and diced yellow onion. Sauté for about 5 minutes, until the onion is translucent.

Step 2

Add the minced garlic to the skillet and cook for another 1 minute until fragrant.

Step 3

Increase the heat to medium-high and add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 7-10 minutes.

Step 4

Drain any excess fat from the skillet before adding chili powder, ground cumin, paprika, oregano, salt, and black pepper. Mix well to incorporate the spices into the beef.

Step 5

Continue to cook the beef mixture for another 5 minutes on medium heat to let the flavors meld together.

Step 6

Remove the skillet from the heat and stir in the fresh lime juice.

Step 7

Rinse and pat dry the lettuce leaves, which will act as soft shell wraps. Arrange them on a serving platter.

Step 8

To assemble the tacos, spoon the beef mixture onto each lettuce leaf. Top with diced cherry tomatoes, chopped cilantro, sliced avocado, and chopped green onions.

Step 9

Serve immediately and enjoy your Whole30 compliant beef tacos!
